In mid-July we celebrated the wedding of a beautiful couple, Heather and John at Phoenixville Foundry. We began planning their wedding about a year and a half ago and the journey with the couple and their families was wonderful. We built a bond, guiding them along the planning process to ensure no details were missed and that their dream day was everything they wanted and more. This bountiful wedding had every type of food and food service you could imagine from start to finish. To give each part its time in the spotlight, this week we will be featuring the wedding in sections from cocktail hour, to dinner and finally dessert and late night snacks. Also, in attendance at the wedding was the crew from TLC’s Say Yes To The Dress. We will keep you updated on the air date when it becomes available!
The couple was married off-site and arrived to the Foundry just as cocktail hour was getting underway. After a few photos the couple made their way in to enjoy the passed hors d’oeuvres and action stations they had chosen for cocktail hour. As guests the nearly 200 guests made their way up to the mezzanine they met first a signature cocktail station situated at the bottom of the staircases. The white peach sangria served in wine glasses sat on raised clear glass panels giving depth and dimension to an ordinary square table. The fabulous floral centerpiece created by Sommerfield Design Flowers brought the table to life with lots of color and height.
At the top of the right wing of the mezzanine was Chef Akio at the raw bar serving hand rolled sushi. Classic California rolls were served alongside futomaki and shrimp nigiri with accompaniments including wasabi, pickled ginger and soy sauce. Traditional shrimp cocktail and Jonah crab claws were at the other end of the station with horseradish, cocktail sauce, Tabasco and sauce Louis. Both selections were displayed on J. Scott Catering’s custom made black bars which play well with the Foundry’s industrial elegance.
On the opposite side of the mezzanine, J. Scott Catering chefs were preparing pasta dishes to order with roasted red pepper penne and tagliatelle pastas. Guests chose from marinara, alfredo or olive oil and garlic sauces to toss with a variety of toppings including grilled asparagus, grilled eggplant, spinach and yellow and green sautéed squash just to name a few. Guest pasta creations were finished with a touch of grated parmesan and for those with a spicy side, a sprinkling of red pepper flakes.
A full bar was also offered on the mezzanine featuring the J. Scott Catering signature bar mix. Kids in attendance enjoyed Shirley Temples and Roy Rogers while adults enjoyed the signature sangria or the ever popular Captain and Coke or Vodka tonic.
J. Scott Catering wait staff passed hors d’oeuvres throughout the mezzanine to guests in both our unique hors d’oeuvre T-shirts as well as our classic service attire with simplistic trays and practical chalkboards. Selections included our popular mini Caesar salad in parmesan tuile basket sprinkled with homemade pumpernickel croutons, steamed vegetable dumpling with sweet chili sauce and Thai smoked chicken on a wonton crisp. Of course what would a wedding be without bacon wrapped scallops with horseradish dipping sauce or our favorite American mini Whimpy burgers served with ketchup, bleu cheese and Russian dressing to customize the mini treat. Prosciutto, tomato & balsamic cheese on fennel toast, turned out to be a very well received new addition to our hors d’oeuvre selection.
The wedding was packed with little details that truly told the story of the couple. As guests arrived a saxophone and guitar duo played sweet songs to get everyone in a celebratory mood. As they entered the Cupola ballroom, the “guest book” was a white guitar available for leaving the happy couple a message of best wishes. The couple opted for a place card frame instead of an individual place card table. This is quickly becoming the favorite way of showing guests to their seats at today’s weddings. To help facilitate guests finding their seats there was a name frame both at the base of the stairs and on the mezzanine.
