Today in the kitchen we’re cooking up some Fried Green Tomatoes, just like in the movie!

This simple but scrumptious recipe consists of:

2-4 green tomatoes thickly sliced, discard the ends

½ cup flour

2 beaten eggs

1 tablespoon parsley

1 teaspoon of salt and pepper

1 cup bread crumbs

¼ cup olive oil

Place the flour and eggs in separate bowls and place the breadcrumbs in a third bowl with the salt and the pepper.

Dip the tomato slices in flour, then eggs, then bread crumb mixture.

Heat 2 tablespoons of olive oil in a skillet on medium heat. Deep fry half of the coated tomato slices at a time until golden brown. As you cook the rest of the tomatoes, add olive oil as needed.

Presto! You have delicious fried green tomatoes that are great for brunch or a small get-together.
