Popularized in America by the infamous Julia Child, salad niçoise or niçoise salad (as either order is correct) is a mixed green salad traditionally accompanied by niçoise olives, tomatoes, artichokes, green beans and tuna or anchovies drizzled with vinaigrette. The J. Scott Catering version is composed on a bed of mixed greens topped with grilled veggies, sautéed green beans, hard-boiled egg, roasted red peppers, roasted fingerling potatoes and calamata olives. Niçoise dressing was also served on the side. Grilled chicken breast also accompanied this healthy lunch option.
