Chef made enchiladas for lunch yesterday and I had to share this photo of them.  The roll itself is the traditional style but is topped not only with crushed whole tomatoes and sauteed onions but a bright green flavor packed sauce.  The sauce is made by pureeing cilantro with lime juice and adding garlic, olive oil,  salt and pepper.
