On a constant quest to outdo himself is our Executive Chef Erin Morrison. At a tasting held this afternoon he put together this island inspired twist on a fish taco. With seared fluke, diced tomatoes, red onion, roasted pineapple and red cabbage slaw, the flavor packed mix was served in a crisp tortilla cone as opposed to the traditional taco shell. The cones were served in a bold cobalt blue bowl filled with orange lentils to keep them standing up.
