A Friday evening in mid-January served as the perfect backdrop for a corporate holiday celebration held at Phoenixville Foundry. As we break this fun filled event down into bite sized pieces, it will showcase the many moving parts that go into the planning and execution of an event for 500. The international cuisine station took guests on an expedition around the world in one easy trip. On three separate stations guests could choose from Asian, Spanish or Italian.
For those in the mood for Asian, guests could enjoy a sampling of sushi from sushi chef Akio. Salmon nigiri, tuna rolls, California rolls and cucumber rolls were served alongside wasabi, pickled ginger and soy sauce. It even came complete with fortune cookies.
The Italian portion of the station featured prosciutto flatbread with arugula and sharp provolone drizzled with reduced balsamic vinegar and truffled Kennett Square macaroni and cheese made with fresh ricotta cheese.
Spanish items included chorizo and grilled corn quesadilla with scallions and Cotija cheese, grilled vegetable quesadilla with pepper jack cheese and guacamole, salsa and tri-colored tortilla chips.
This was possibly the most popular of all the stations, then again, we have yet to cover the crepe station. Check back tomorrow to find out what the guests enjoyed for dessert at this festive event!
