J Scott Catering “Pin To Win” Contest Winner

J . Scott Catering was recently chosen as the winner of American Metalcraft’s “Pin To Win” contest on Pintrest!  We pinned several of our favorite menu items featured in American Metalcraft’s  Mini Cast Iron Pot.  Our winning entry included our original recipe for Wild South Carolina Shrimp and Grits.  Our culinary team uses their vast knowledge of industry trends to not only provide a unique presentation but also unexpected recipes.  We thought you would enjoy our winning recipe to add to your collection-your guests will be thoroughly impressed!

Wild South Carolina Shrimp and Grits

4 cups water or chicken stock

1 cup grits

1 cup shredded sharp cheddar cheese

1 tbsp. butter

1 lb. Carolina shrimp peeled deveined

6 slices apple smoked bacon

Lemon juice to taste

1 tsp. garlic

1 tbsp. chopped parsley

1 bunch scallions

Bring water or stock to a boil. Slowly add grits while whisking. Cook for 20-25 minutes or until liquid is absorbed while stirring occasionally after liquid is gone. Whisk in butter and cheddar cheese. Season with salt with salt and pepper and lemon.  In saute pan, cook chopped  apple bacon reserving some fat.  Sweat garlic in fat, add shrimp and cook until tender. Check seasoning and adjust.  Place grits in bowl, top with sauteed shrimp and bacon. Garnish with parsley and scallions.

Don’t forget about dessert!  At a recent wedding, our culinary team created exceptional desserts in American Metalcraft’s Mini Cast Iron Pot.  The bride and groom wanted to provide guests with an alternative to wedding cake, our team used seasonal fruit to create individual tarts, pies and cobblers.  Because each handle was covered with its own mini oven mitt, guests were able to pick up their preferred dessert and carry it back to their table.  Doesn’t a mini apple cobbler or mini pumpkin pie sound great for dessert after your Thanksgiving meal?
