J. Scott Catering Food Stations

The Luv4Logan fundraiser featured our very popular Gyro station.  For anyone who isn’t familiar, a Gyro is a traditional Greek street food comprised of thinly sliced, vertically spit roasted meat served in grilled Pita with a variety of accompaniments including vegetables and sauces. The initial work that goes into the many components might be time consuming but the Gyro is a unique time saver when it comes to serving your hungry crowd as you will find out below.

Here, chef was trying out a new recipe for a Mediterranean style roast pork Gyro, complete with sautéed zucchini, red peppers and onions, Greek olive hummus, sliced green olives, Mesclun mix and sliced fresh tomatoes.  The roast was first brined in a mix of herbs and spices, salt, pepper and a touch of hickory seasoning to add a subtle smokiness.  The center cut pork loin was patted dry, rubbed with Tuscan oil, more herbs and spices, then roasted.  After letting it rest, the pork was sliced thinly and the Gyro was assembled with the other ingredients.

This style of dinner works well for advanced prep.  The roast can be made on a Sunday while you are preparing a big family dinner, then sliced and reheated with the other components for a quick and easy weekday dinner.  Give it a try and tell us what you think on our Facebook page!
