Phoenixville Foundry has always been one of the premier locations in the greater Philadelphia area to hold corporate events. This past Monday, J. Scott Catering held a banquet style corporate celebration at Phoenixville Foundry for a large franchise company, with over 300 guests in attendance.J. The event kicked off at 10AM with butlered hors d’oeuvres in the beautiful cocktail area outside while guests arrived. These included barbeque braised short ribs, spicy shrimp tacos with pico de gallo and black bean puree, Vietnamese chicken spring rolls served with tamarind dipping sauce, pork shoulder quesadillas with roasted Poblaño relish, mini artichoke confit pizza with arugula pesto and mozzarella, and avocado and brie with sun dried tomato on crostini.

Guests were then assembled into the Cupola Ballroom for the welcome address, speeches, and an award presentation. The first course was served and included a refreshing grilled romaine salad with roasted tomatoes, caper berries, red onions, cucumbers, blue cheese cigar, and drizzled with red wine oregano vinaigrette. While guests enjoyed their salad, aerial silk dancers performed a breathtaking act from above, provided by BVT Live.

The main course featured a choice of pan seared halibut in carrot ginger broth or char-grilled garlic beef tenderloin in a merlot reduction. A vegetarian option was also available and included a fall vegetable risotto with grilled leeks, porcini broth, and toasted brioche. Each entrée was accompanied with creamy Yukon gold mashed potatoes and sautéed green beans with grilled tomatoes and red onions.

Dessert was served after all had finished their entrée and included cinnamon crème Anglaise over a delicious caramel apple torte.  It was the perfect ending to an exciting celebration held at Phoenixville Foundry.
